Yummy Fig Ginger and Pecan Loaf
185 g softened butter
150 g castor sugar
3 eggs, lightly beaten
150 g sultanas
150 g glace figs
150 g glace ginger
75 g plain flour
75 g self-raising flour
75 g pecan nuts, roughly copped.

Preheat the oven to 160 *C. Lightly grease a 23 – cm * 12 – cm loaf pan and line the base with non-stick baking paper.
Cream the butter and sugar until light and fluffy. Slowly add the eggs until combined. Stir in the sultanas, figs and ginger. Sift the flours into another bowl and mix in the nuts. Fold into the cake batter.
Spoon into the prepared pan and bake for 1*1/4 hours or until cooked through. Cool into tin for 20 minutes before turning out onto a rack.
